I start on my side and end up on my back

The two positions want different lofts. Side sleeping has to fill a shoulder-width gap; back sleeping has to fill only the hollow behind the neck, which is much smaller. A pillow correct for one is wrong for the other, and no shape removes that conflict — it can only soften it.

Adjustable-fill pillows and pillows with different heights along their length exist for exactly this. The honest question is which position you actually spend the most hours in, which is not always the one you fall asleep in.
