I cannot sleep sitting up on a plane
Upright, there is no gap between your head and a mattress to fill, because there is no mattress. The job changes completely: instead of supporting weight from below, the pillow has to stop your head travelling sideways or forward when you lose muscle tone. That is a restraint problem, not a loft problem, and it is why a good bed pillow is useless on a plane and a U-shaped collar is useless in bed.
